If your aspirations are to work in a commercial kitchen and hold a supervisory or team leader role then this certificate will give you the edge on how to succeed. This course gives you an opportunity to learn skills in personal and workplace communication, planning and organising as well as problem-solving and technology. Your studies will give you the skills that will help you motivate and lead kitchen teams, identify and assess operational and services issues, plan food production, schedule work flow, gain an understanding of legal compliance issues, as well as plan, prepare and cost your own menu. You will receive classroom training and complete on-the-job components where you can develop cookery skills to prepare a range of foods. Entry requirements

  • English Language Proficiency: IELTS 5.5 (no individual band less than 5.0) or ISLPR 2+ on all skills or other - For a list of all English Language test accepted by TAFE Queensland International
  • Academic Requirements: Completion of Year 12 (or equivalent), TAFE Queensland Brisbane Completion of Year 10 (or equivalent). Non school-leavers must have relevant work experience or qualification that indicates likely success of course completion. For more information on the international education achievement levels equivalent to Year 10 and 12.

Students should be a minimum of 18 years of age. Student visa applicants under the age of 18 will be accepted where they demonstrate that they will be accompanied by a parent, legal custodian or a suitable relative who is aged 21 or over. Resources required

It is recommended that students have access to a reliable internet connection to access TAFE Queensland's online learning system Connect and a computer with up-to-date software, including Microsoft Office, Adobe Acrobat Reader and Adobe Flash Player. This equipment and software is available for students to use at all TAFE Queensland locations.

Timetable

Timetables may be available online or may be provided to you at your program orientation.

Your timetable may change every semester and you must be able to manage your commitments to ensure attendance at all your classes.

Timetables will be different across TAFE Queensland locations. This is an example of what a course timetable could look like -  

Monday and Tuesday 8.00 am - 4.45 pm and Wednesday 8.00 am - 12.00 pm.

Or

Wednesday and Thursday 8.00 am - 4.45 pm and Friday 8.00 am - 12.00 pm.

Placement

TAFE Queensland Brisbane:

This qualification includes the completion of 360 Vocational Placement hours over the 3 semesters as part of the program. Vocational Placement is structured workplace learning that prepares you for the workforce. 

The experience with the placement provider will:

  • enable you to gain hands-on experience in the workplace;
  • help you link knowledge and skills with jobs; and
  • help you to better understand theory learnt by putting it into practice.

TAFE Queensland North:

Vocational Placement: All students must complete a minimum of 360 hours of vocational placement (6 weeks at 40 hours per week). This is spread across the duration of the program. TAFE will procure placements on behalf of the students, but it is the student’s responsibility to provide their own transport and accommodation if required.

TAFE Queensland East Coast:

Students are encouraged to complete Work Experience throughout the duration of this course.

TAFE Queensland Gold Coast:

As an enrolled student of TAFE Queensland Gold Coast you may be required to attend practical work placements as part of your studies. This is at the discretion of the teacher.

As an enrolled student of TAFE Queensland Gold Coast, you may be required to attend practical work placements as part of your studies. During these placements, you may become familiar with information that is confidential to that workplace (for example financial or business affairs, personal affairs and family background of staff and clients, technical information, trade secrets, know-how, formulae, processes, ideas, and inventions). You must not divulge any confidential information that you become aware of during a placement. Breaches of confidentiality will be considered to be acts of behavioural misconduct and may result in disciplinary action.

Additional costs

There are additional costs associated with this course, that are not included in your tuition fees. The below items are required to undertake the practical classes, and are available at a variety of hospitality stores. Further information regarding the purchase of the following items will be discussed at orientation;

  • Prior to orientation students will be required to purchase a complete uniform kit comprising of a chef hat, two long-sleeved jackets, neckerchief, chef trousers, two aprons and appropriate safety footwear costing approximately $250. Additionally, a full set of tools and equipment costing approximately $250 are required to be purchased by each student. The faculty administration can provide a full list and information on where to purchase these items.

Please note that all students must be appropriately dressed and have the necessary equipment before entering any practical class.

If your application is successful, we will send you an Offer of Place letter. To accept it and secure your place in your chosen program, you will need to:

After you have accepted your Offer of Place, you will receive your Confirmation of Enrolment (CoE) and with your CoE you can apply for your student visa. You will need to arrange your student visa before you come to Australia.

Please note that International Orientation day is compulsory. Students must attend the International Orientation Day before commencing their studies with TAFE Queensland.

Orientation

At the beginning of each semester orientation events are hosted across TAFE Queensland locations.

TAFE Queensland recommends you arrive two weeks prior to your course start date to allow time to organise and settle into your accommodation and prepare for your studies.

International Orientation which is usually conducted the week before study commences will help answer many of your questions about studying with TAFE Queensland. This comprehensive orientation covers many important topics including

  • Living in Queensland and understanding our Australian culture

  • Accommodation

  • Banking

  • Transport

  • Student safety

  • Learning support

  • Overseas Student Health Cover (OSHC), insurance and medical needs

Program specific orientations are also conducted one week prior to the start of study. This is an opportunity for you to meet your teachers and classmates, get to know your campus, and familiarise yourself with your study schedule.
